I baked these vegan fruity crumble bars a few weeks ago at uni and my friends absolutely loved them (and so did I)! So here is the recipe...
These fruity crumble bars are great for mid-morning or mid-afternoon snacking, maybe even with some yogurt and fresh fruit for breakfast, or with some ice cream or custard for dessert! The possibilities are endless haha but I can assure you that these bars are super delicious, cheap and easy to make. You will probably find most of the ingredients you need in your cupboards already.
- INGREDIENTS -
150g oats
180g plain flour
130g caster sugar
175g coconut oil (unsalted butter can be used for non-vegan bars)
Half a jar of raspberry jam
A packet of frozen berries (defrosted)
- METHOD -
1. Mix together the oats, flour and sugar in a large bowl.
2. Add the butter (or coconut oil) to the dried ingredients and using your fingertips create a breadcrumb-like mixture.
3. Grease a square tin and add baking parchment.
4. Add two-thirds of the mixture to the bottom of the tin and press down to create a base.
5. Spread a layer of jam on top of the base.
6. On top of the jam add your berries.
7. Sprinkle on top of your berries the remainder of your breadcrumb-like mixture.
8. Bake in the oven until golden.
9. Leave the tin to cool and then slice into squares.
10. Enjoy!

Try out different flavour jams and fruit fillings!
