Last Saturday I spent a lazy day with my family and, like most lazy days, we ended up baking! With help from my adorable little sisters, I made a baked a banana and chocolate loaf. I was so happy with the outcome as the loaf tasted brilliant! It is such an easy recipe to do, with an amazing bake to finish with. We had lots of fun making, and eating it, so here is the recipe!
Banana & Chocolate Loaf
Ingredients:
Loaf
100ml Sunflower Oil
175g Caster Sugar
175g Self-raising Flour
3tbsp Cocoa Powder
1/2tsp Bicarbonate of Soda
100g Chocolate Chips
2 Bananas
3 Medium Eggs
50ml Milk
Icing
85g Butter
175g Icing Sugar
2tbsp Cocoa Powder
1tbsp Milk
Method
Heat oven to about 150C and grease a loaf tin with oil.
Mix the sugar, flour, bicarbonate of soda, cocoa and chocolate in a large bowl.
Mash the bananas in a separate bowl and stir in the whole egg plus 2 yolks, oil and milk. Beat the egg whites until stiff. Stir the wet banana mixture into the dry ingredients, then fold in the egg whites.
Pour the mixture into the tin and bake for about an hour, or until the middle is cooked; then cool.
To make the icing mix all the ingredients together in a bowl - its that simple! Then smooth over the top of your loaf. Why not finish off your loaf with chocolate shavings, or even banana chips?
